Crab Quesadillas

Crab quesadillas add a light tasty twist to your usual quesadilla. Made with tender crab-meat these quesadillas are a great alternative to chicken or beef, enjoy.

Ingredients
  

  • 1 8 oz Crab meat lump or claw
  • 1 pkg large flour tortillas
  • 1 red bell pepper diced
  • 1 ½ cup shredded cheese I used Colby Jack
  • 2-3 green onions finely chopped
  • 1-2 Tbsp butter melted
  • 1 Tbsp Olive Oil

Method
 

  1. In a large bowl mix together shredded cheese and green onions.
  2. In a large skillet bring oil to a medium heat.
  3. Add red bell pepper and saute for a minute.
  4. Add crab meat, combine with spatula and saute for another minute or so. Set aside.
  5. Bring a nonstick skillet to medium heat.
  6. Melt butter and place in a tortilla.
  7. Add a thin layer of cheese mixture onto half of the tortilla.
  8. Add a layer of your crab mixture and finally another thin layer of cheese.
  9. Fold other half of your tortilla over and cook until golden brown.
  10. Flip and repeat until cheese is melted.
  11. Remove and slice into 4's and serve with sour cream, Guacamole (and pico de gallo if desired).
