Creamed Spinach
- Add heavy whipping cream and garlic to a large skillet and bring to a boil.
- Add Parmesan cheese and stir. Reduce heat to medium low and stir until cheese is melted (2-3 minutes).
- Add fresh spinach, stir in the Parmesan sauce on medium low just until spinach starts to wilt slightly. Add salt and pepper if needed.
- Remove from heat. Top with lemon Zest if preferred.
Chipotle Chicken:
- Generously season chicken with salt, pepper, garlic, paprika and Chipotle powder.
- Prepare a separate skillet for chicken (cast iron preferably).
- Heat cast iron skillet over medium heat for three minutes to allow cast iron to heat through. Add two Tbsp Olive Oil to skillet.
- Add chicken smooth side down for 5 minutes.
- Flip and reduce heat to medium low for an additional 5 minutes. Internal temperature should be 165°F
- Turn off heat and add 1 Tbsp butter, mix well to coat chicken.
Serve chicken with fresh chopped parsley alongside Creamed Spinach.
