Chicken Enchiladas

Kenny's in the kitchen again this time he's putting together a simple recipe to make awesome chicken enchiladas. Enjoy

Ingredients
  

  • 1 can enchilada sauce
  • 1 can fire roasted chili
  • ½ onion diced
  • 2 chicken breast diced
  • Chili powder
  • Onion powder
  • Cumin
  • Salt
  • Pepper

Equipment

  • 9x13 baking dish

Method
 

  1. Layer bottom of dish with half of sauce 9 oz.
  2. In a large bowl mix cooked shredded or cubed chicken, onions, fire roasted chili's, seasoning and remaining sauces
  3. Preheat oven to 400
  4. On a shallow plate pour several Tbsp of chicken broth
  5. Dip tortilla in both to soften then set to side on plate
  6. Place 3-4 Tbsp of meat in center of tortilla.
  7. Add cheese and meat filling
  8. Carefully roll enchiladas and place in baking dish
  9. Once dish is full (7-6 enchiladas) cover withe sauce and 1 1/2 cup cheese
  10. Bake for 25 min
