Ingredients
Method
- Season chicken breasts with salt and pepper.
- Heat grill to medium high heat.
- Grill chicken breasts 5-6 minutes per side until fully cooked.
- Remove, let rest a few minutes and slice into thin strips. Cook rice.
- In a pan melt butter over medium heat.
- Once hot add corn. Cook 3-4 minutes until slightly charred.
- Stir in mayonnaise, sour cream, chili powder and lime juice.
- Cook for another additional 2 minutes. Turn off heat.
Assemble bowl
- First add rice to the bowl.
- Next layer sliced chicken strips.
- Top with street corn mixture and Cotija cheese and chopped cilantro.
