Carne Asada Tacos(Grilled Steak)

The key to having a great Carne asada (grilled steak) taco is the meat. We start out by marinading the meat till its tender then seasoning it with a custom spice blend. These carne asada tacos will not disappoint, enjoy.

Ingredients
  

Marinade
  • 1-2 lbs flank steak pounded to an even thickness
  • ¼ cup soy sauce
  • ¼ cup orange juice
  • 2 Tbsp fresh lime juice and Zest of lime
  • 2 Tbsp Olive Oil
  • 1 Tbsp brown sugar
  • 1 tsp liquid smoke
Spice mix
  • 1 Tbsp ground cumin
  • 1 Tbsp garlic powder
  • 2 tsp of each smoked paprika and chili powder
  • 1 tsp of each onion powder and ground coriander
  • ½ tsp of each pepper and cayenne pepper
For serving
  • 10-12 corn tortillas
  • Pico de gallo
  • Sour cream
  • Guacamole
  • Cotija Cheese

Method
 

  1. Add spice mix ingredients in a small bowl. Whisk together and set aside.
  2. Whisk together all Marinade ingredients except steak, add 3 tsp of seasoning, whisk and pour in a large zip lock bag.
  3. Add steak, seal and let marinate 4 hours or up to overnight. The longer the better.
  4. When ready to grill pat steaks dry with paper towel, add a 2 Tbsp Olive Oil to remaining spice mix.
  5. Rub into steak and grill on medium high heat for 5-6 minutes on both sides for a perfect medium. Let steaks rest 10 minutes before slicing.
  6. Prepare tortillas in microwave or lightly grill.
  7. Assemble tacos by layering steak followed by pico de gallo, Guacamole, sour cream and cotija cheese.
  8. Serve with lime wedges and hot sauce if desired.
