Method
- Season chicken with Cajun Seasoning.
- Heat olive oil in a large skillet.
- Cook chicken 5-7 minutes until done and no longer pink in the center. Set aside.
- Cook smoked sausage in same pan until browned. Set aside.
- In a large Cast iron skillet or Saucepan add 1-2 Tbsp Olive Oil on medium heat.
- Add onions, red bell pepper, garlic and sun-dried tomatoes and saute for about 2-3 minutes.
- Add heavy whipping cream and chicken stock or wine.
- Bring to a simmer for 3-4 minutes until sauce starts to thicken a bit.
- Add cream cheese and stir until melted and well combined.
- Mix cooked pasta with the Alfred sauce.
- Next add the chicken and smoked sausage. Mix well and remove from heat.
Top with grated Parmesan. Garnish with fresh chopped parsley and serve with garlic bread.
