Brown Sugar Trout

Ingredients
  

  • 1 pound trout sliced into fillets
  • Salt and pepper to taste
  • 1 Tbsp extra virgin olive oil
  • 2 Tbsp butter divided
  • Brown Sugar Sauce:
  • 3 Tbsp brown sugar
  • ½ tsp garlic powder
  • ½ tsp fresh ginger grated
  • 1 Tbsp soy sauce
  • 1 tsp Worcestershire sauce
  • 1 Tbsp lemon juice or the juice of half a lemon
  • 2 Tbsp chicken stock
  • 1 tsp cornstarch

Method
 

  1. Season trout fillets with salt and pepper.
  2. Bring a large cast iron skillet to a medium high heat. Add oil and one Tbsp butter.
  3. Once melted and up to temp. add trout skin side down and cook for 5 minutes.
  4. Add sauce ingredients to a bowl and whisk together well. Set aside.
  5. Flip trout and cook for another 2-3 minutes.
  6. Add remaining Tbsp of butter.
  7. Once melted pour brown sugar sauce over trout and let sauce bubble for about 30 seconds. Remove from heat.
  8. Spoon sauce over trout.
  9. Serve immediately for best results. Pair with Sautéed spinach or favorite sides.
