Braised Oxtails

When was the last time you made braised oxtail? This hearty dish takes oxtails, carrots, garlic, celery,and onions then slow cooks them blends in a delicious stew your fam will love, enjoy.

Ingredients
  

  • 4 lbs Oxtails
  • 4 large carrots peeled and roughly chopped
  • 1 onion chopped
  • 2 stalks celery chopped
  • 4-5 garlic cloves minced
  • 3 bay leaves
  • 2 sprigs fresh Rosemary
  • 1 cup red wine
  • 1 14 can tomatoes chopped or diced
  • Salt and pepper
  • 4 cups beef stock

Method
 

  1. Generously season Oxtails with salt and pepper then brown them in a large pot or Dutch oven in a bit of oil (about a Tbsp). Remove and set aside.
  2. To the same pot add onions, celery, and carrots. Cook until golden and slightly softened.
  3. Add garlic and herbs. Saute another minute or so.
  4. Pour in red wine and allow to reduce a bit.
  5. Next add tomatoes and Oxtails back to the mix.
  6. Pour in enough stock to cover Oxtails.
  7. Season with salt and pepper, bring to a boil then reduce heat to a gentle simmer, cover and simmer for 3 hours.
  8. Check every hour or so to see if Oxtails need more stock. Remove the lid for the last hour of cooking to allow sauce to reduce.
  9. Check taste and tenderness. Delicious right?! Cool!
  10. Serve over Smashed Potatoes, rice or polenta.
