Blackened Cod Sandwich

This white fish recipe is delicious and can be served in a sandwich or alone. Seasoned with things like garlic paprika and cumin then blacken until the outside has a nice crispy texture while the inside is still flacky and tender, this blacken cod sandwich is a winner.

Ingredients
  

  • 4 Pacific Cod filets or preferred white fish thawed if frozen
  • 2 Tbsp oil
  • 2 Tbsp butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ¾ teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • ½ teaspoon Salt
  • Brioche Buns
  • For the Cajun sauce
  • ½ cup mayonnaise
  • 1 ½ teaspoons ketchup
  • 1 Tbsp dill relish
  • 2 Tsp Cajun Seasoning

Method
 

  1. In a small bowl combine mayonnaise, ketchup, relish and Cajun Seasoning. Whisk or stir together well. Cover a and refrigerate for later.
  2. In a separate bowl combine all the blackening spices. Mix well.
  3. Coat both sides of your fish generously with blackening spices.
  4. In a large skillet add oil and met butter. On a medium high heat add fish and cook for 3-4 minutes per side (Internal temperature should be 137°F
  5. Serve Blackened Fish on Brioche Buns with Cajun Sauce.
