Blackened Catfish

Ingredients
  

  • 2 catfish fillets
  • Melted butter
Spice mix
  • 1 ½ Tbsp paprika
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 Tbsp ground thyme
  • 1 tsp blk pepper
  • 1 tsp cayenne pepper
  • 1 tsp dried oregano
  • 1 tsp salt
  • Polenta corn grits

Method
 

  1. Season both side of filet with the spice mix
  2. Preheat skillet (medium heat) with 1 tsp butter
  3. Cook fillet 2-3 min per side
  4. Boil 3 cups water 1 tsp salt
  5. Add Polenta to water simmer for 10 minutes
