Alabama BBQ Chicken Sub

Ingredients
  

  • 6-8 chicken tenders
  • 2 shallots
  • 1 ½ cup of shredded cheese
  • French roll
White BBQ sauce
  • ½ cup mayo
  • 2 tbsp white vinegar
  • 2 tbsp white pepper
  • Creole or Chipotle mustard
  • ½ tsp salt
  • 2 tbsp sugar
  • 2 garlic cloves
  • 2 tsp horseradish
  • 1 Tbsp lemon juice
  • ½ tsp paprika

Method
 

  1. In a large bowl mix all ingredients for white BBQ sauce
  2. Salt and pepper on both side of chicken tenders
  3. Add 2 tbsp of olive oil to a pan and preheat on med-high heat
  4. Cook chicken 4-5 min per side (halfway thru add shallots to the pan)
  5. Set meat to the side and allow to cool
  6. Chop chicken into 1 in chunks
  7. In a bowl add chicken chunks, white sauce, shallots, and shredded cheese (mix well)
  8. Preheat oven to 450
  9. Slice french roll down the middle and add meat filling
  10. Top with more white sauce and cheese then broil for 5-10 min
