Southwestern Egg Roll
Prep time: 15 min
Cook time: 15-20 min
Ingredients
- 3 garlic cloves minced
- 1/2 yellow onion diced
- 1/2 diced red pepper
- 1 shredded chicken breast
- 10 oz black beans
- 1 bowl spinach
- 10 oz bag corn frozen
- 1 Tb olive or grapeseed oil
- 1 package egg/spring rolls
Directions
- Preheat oil in a pan over medium heat
- Add garlic and onions and saute for 1 min
- Add red pepper and spinach and let simmer 2-3 minute
- Add 6 oz corn and a can of black beans
- Finally, add chicken mixture and reduce heat to med-low
- Add garlic onion and black pepper cumin and seasoning then cover for 5 min
- Add in 1 cup cheese mixture and cover
Roll’n the egg roll
- Make an egg wash with 1 egg and several Tbsp of water
- Brush egg wash onto edges of spring roll
- Add filling to the center of the roll
- Tuck in corners and roll
- Preheat oil in a skillet on medium heat
- Cook in oil for several minutes until brown turning occasionally
