Southwestern Spinach and Chicken Wrap

This southwestern spinach and chicken wrap is delicious and healthy. Great for lunch or dinner the southwestern spinach and chicken wrap is make with tons of veggies and tender grilled chicken, enjoy.

Ingredients
  

  • 1 pkg spinach wraps
  • 2 boneless skinless chicken breasts butterflied
  • Salt pepper, garlic powder and Cajun Seasoning (about a tsp of each)
  • 1 small onion sliced
  • 1 red bell pepper sliced
  • 1 Handful of fresh spinach
  • 1 can black beans drained and warmed
  • 1 can sweet corn or frozen cooked
  • 1 Tbsp Pico or sliced Pepperoncini
  • 4 oz shredded cheese
  • Mayo and or Aioli
  • Olive oil

Method
 

  1. In a large bowl whisk together Seasonings in Olive oil.
  2. Add chicken breasts and thoroughly toss . Set aside and let marinate for 30 minutes.
  3. Heat 1-2 Tbsp Olive Oil in a skillet and saute onions, spinach and red bell peppers about 2-3 minutes until slightly softened.
  4. In a large cast iron skillet with grill marks (if available) cook chicken breasts 3-4 minutes per side until golden brown and juices run clear.
  5. Remove and set aside 10 minutes before slicing into nice sized chunks.
  6. Lay out spinach wrap and spread a dollop of Mayo and/or Aioli.
  7. Sprinkle cheese and a Tbsp of Pico or peppers.
  8. Next add a small scoop of black beans and corn mixture.
  9. Finally add onions, pepper spinach blend. Top with chicken.
  10. Fold wrap, tuck sides and roll. Slice in half.
