Shrimp and Grits made with Polenta corn grits

Kenny’s in the kitchen cooking up his version of the southern favorite shrimp and grits using yellow Polenta corn grits

Shrimp & Grits with yellow Polenta

Ingredients

  • 1 lb jumbo shrimp
  • Old Bay seasoning
  • 1/4 tsp salt
  • Polenta (yellow corn grits)

Directions

  1. Season shrimp with Old Bay seasoning
  2. Bring 3 cups of water to a boil with 1/4 tsp of salt
  3. Add 1 cup corn grits to boiling water
  4. Stir grits, reduce heat to low, and simmer for 5 min
  5. After 5 min add 1 tbsp of butter, stir and simmer 5 min
  6. Preheat skillet or grill on med-high heat
  7. Grill shrimp 2 min per side (shrimp can be skewered or loose)
