Kenny’s in the kitchen cooking up his version of the southern favorite shrimp and grits using yellow Polenta corn grits
Shrimp & Grits with yellow Polenta
Ingredients
- 1 lb jumbo shrimp
- Old Bay seasoning
- 1/4 tsp salt
- Polenta (yellow corn grits)
Directions
- Season shrimp with Old Bay seasoning
- Bring 3 cups of water to a boil with 1/4 tsp of salt
- Add 1 cup corn grits to boiling water
- Stir grits, reduce heat to low, and simmer for 5 min
- After 5 min add 1 tbsp of butter, stir and simmer 5 min
- Preheat skillet or grill on med-high heat
- Grill shrimp 2 min per side (shrimp can be skewered or loose)
