Shepherds Pie with Lamb

Ingredients
- 1 lb ground lamb
- Worcestershire sauce
- Diced carrots
- Diced celery
- Diced red bell pepper
- Minced garlic
- Salt
- Pepper
- Garlic powder
- Cracked black pepper
- Cumin
- Fennel seeds
- Rosemary
- Thyme
- 1 cup carrot and peas
- 1/3 cup Merlot or red wine
- Corn (fresh or frozen)
- Tomato paste
- All purpose flour
- Russet potatoes
- Sour cream
- Butter
- Shredded Colby Monterey jack cheese
Directions
- Brown lamb in skillet over medium hi heat.
- Once browned remove from heat and drain meat
- Dice celery onions red peppers and saute in lamb oil several minutes
- return lamb to mixture and add in minced garlic salt peppet
- season meat with1 tsp cumin and 1tsp fennel seeds
- Peel several pieces of rosemary into mix
- Add thyme also and mix thoroughly and simiar 1 min
- 2/3 cup carrots
- 1/3 cup peas
- Â 1/4 cup corn
- Add 1 Tb tomato paste and 2 Tb all purpose flour
- Simmer several minutes
Potatoes
- Wash and peel 3-4 russet potatoes
- Place in pot and cover with water. Add 1 tsp salt and bling to boil
- Reduce heat to medium and cook 15 min
- Once fully cooked remove from heat and drain
- In a large bowl smash the potato
- Add 1Tb sour cream and 1Tb butter
- Mix well adding 1/4 cup heavy whipping cream
- Season with salt, pepper and garlic powder
Pie
- Preheat broiler to 450
- Fill cast-iron skillet with lamb meat
- Cover with mashed potatoes
- Top with cheese
- Bake in broiler 5-10 min
