Here’s a great dinner idea, pan seared cod in red pepper sauce. Tender Cod seared to a golden brown and served in a decadently creamy red pepper sauce, enjoy.
Pan Seared Cod in Red Pepper Sauce
Ingredients
- 4 cod fillets (about 6 ounces each)
- 2 Tbsp Olive Oil
- Salt and pepper to taste
- 1 tsp paprika (Optional)
- 2 roasted red peppers (jarred or homemade)
- 1/4 onion diced
- 2 garlic cloves minced
- 1/2 cup heavy whipping cream
- 1/4 cup chicken broth
- 1 more Tbsp Olive Oil
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley chopped
Directions
- Pat cod fillets dry with paper towels. Season with salt, pepper and paprika.
- Heat 2 Tbsp Olive Oil in a large skillet over medium heat.
- Add fish to skillet and cook 3-4 minutes per side until opaque and flakes easily with a fork. Remove from skillet and set aside.
- In the same skillet add 1 Tbsp Olive Oil. Saute onions and garlic for 1-2 minutes over medium low heat until softened and fragrant.
- Add roasted red peppers, paprika and oregano. Cook for another 2 minutes.
- Transfer onion, garlic and red peppers to a blender and blend until smooth. Return sauce to skillet.
- Stir in heavy whipping cream and chicken broth. Stir to combine. Bring to a simmer.
- Adjust flavor with salt and pepper if needed.
- Return cooked cod back to the skillet. Spoon some the sauce over the cod and simmer another 2 minutes.
