If you’re a lover of Greek chicken this recipe is for you. Tender white meat marinaded in a combination of olive oil and herbs then grilled on skewers and serve alone or on pita bread. Souvlki Greek chicken is always a winner, enjoy.
Greek Chicken Souvlaki
Ingredients
- 2 lbs boneless skinless chicken breasts cut into healthy chunks
For Marinade
- 1/3 cup extra virgin olive oil
- Juice of half a lemon plus the lemon zest
- 5 garlic cloves minced
- 2 Tbsp fresh Rosemary chopped
- 2 Tbsp fresh thyme roughly chopped
- 1 Tbsp dried oregano
- 1/4 tsp crushed red pepper
- 1 tsp coriander
- 1 Tbsp Kosher Salt
- 1/2 tsp fresh cracked black pepper
Directions
- Combine all Marinade ingredients together
- Transfer marinade mixture to a plastic zipper bag.
- Add chicken, zip and massage marinade into the chicken. Let marinate in the refrigerator for 4-6 hours.
- Remove chicken from marinade and thread onto skewers (if using wooden skewers soak in water for 20 minutes).
- Grill on both sides checking frequently until golden brown and cooked through.
- Serve on pita bread, tomatoes, red onions, tzatziki sauce and roasted Veggies!
