Garlic Parmesan Lobster Bites
Ingredients
- 2-3 Lobster Tails
- 1 cup flour
- 1 cup cornstarch
- 3 Tbsp Cajun Seasoning divided
- 3/4 cup club soda
- 1 cup vegetable oil for frying
- For Garlic Parmesan Sauce
- 1/4 cup Parmesan cheese shredded
- 1/2 stick of butter
- 2 Tbsp garlic minced or paste
- 1 Tbsp fresh parsley chopped
- 1 Tbsp hot sauce optional
Directions
- Remove Lobster meat from shells, clean, de-vein and pat dry.
- Cut into bite-sized chunks and season with 1 Tbsp Cajun Seasoning.
- In a medium sized bowl combine flour, cornstarch, remaining Cajun Seasoning and club soda (batter should be about the thickness of pancake batter).
- Preheat vegetable oil in large frying pan to 350°F.
- Place Lobster Bites in batter and fry for 3-4 minutes per side.
- Remove and place on wire rack to drain.
- (Sauce) In a medium sized bowl melt butter.
- Add garlic, parsley and hot sauce. Mix well.
- Toss Lobster Bites in sauce and top with Parmesan cheese. Serve immediately.
