Garlic Parmesan Chicken Meatloaf

Go from regular old meat loaf to Chicken Garlic Parmesan Meatloaf. This chicken meatloaf recipe is juicy and packed full of garlic and Parmesan flava, enjoy.

 

Garlic Parmesan Chicken Meatloaf

INGREDIENTS

  • 1 pound lean ground chicken
  • 3 cloves fresh garlic minced
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup plain breadcrumbs
  • 2 large eggs
  • 1 small onion, finely chopped
  • 1 red bell pepper diced
  • Salt and pepper to taste
  • 1/4 cup ketchup for topping

INSTRUCTIONS

  1. Preheat oven to 375°F and prepare a baking dish (slightly greased).
  2. In a large bowl, combine ground chicken, minced garlic, Parmesan cheese, breadcrumbs, eggs, onions, red bell peppers, salt and pepper. Mix until just combined.
  3. Shape mixture into a loaf in the baking dish.
  4. Spread ketchup on the top for additional moisture and flavor.
  5. Bake for 45-55 minutes or until internal temperature reaches 165° F.
  6. Remove from oven and allow to rest 5-10 minutes before slicing.
  7. Serve with roasted veggies or your favorite sides.
