Garlic Parmesan Chicken Meatloaf
INGREDIENTS
- 1 pound lean ground chicken
- 3 cloves fresh garlic minced
- 1/2 cup Parmesan cheese grated
- 1/2 cup plain breadcrumbs
- 2 large eggs
- 1 small onion, finely chopped
- 1 red bell pepper diced
- Salt and pepper to taste
- 1/4 cup ketchup for topping
INSTRUCTIONS
- Preheat oven to 375°F and prepare a baking dish (slightly greased).
- In a large bowl, combine ground chicken, minced garlic, Parmesan cheese, breadcrumbs, eggs, onions, red bell peppers, salt and pepper. Mix until just combined.
- Shape mixture into a loaf in the baking dish.
- Spread ketchup on the top for additional moisture and flavor.
- Bake for 45-55 minutes or until internal temperature reaches 165° F.
- Remove from oven and allow to rest 5-10 minutes before slicing.
- Serve with roasted veggies or your favorite sides.
