Crab quesadillas add a light tasty twist to your usual quesadilla. Made with tender crab-meat these quesadillas are a great alternative to chicken or beef, enjoy.
Crab Quesadillas
Ingredients
- 1 8 oz Crab meat (lump or claw)
- 1 pkg large flour tortillas
- 1 red bell pepper diced
- 1 1/2 cup shredded cheese (I used Colby Jack)
- 2-3 green onions finely chopped
- 1-2 Tbsp butter melted
- 1 Tbsp Olive Oil
Directions
- In a large bowl mix together shredded cheese and green onions.
- In a large skillet bring oil to a medium heat.
- Add red bell pepper and saute for a minute.
- Add crab meat, combine with spatula and saute for another minute or so. Set aside.
- Bring a nonstick skillet to medium heat.
- Melt butter and place in a tortilla.
- Add a thin layer of cheese mixture onto half of the tortilla.
- Add a layer of your crab mixture and finally another thin layer of cheese.
- Fold other half of your tortilla over and cook until golden brown.
- Flip and repeat until cheese is melted.
- Remove and slice into 4’s and serve with sour cream, Guacamole (and pico de gallo if desired).
