Chopped Chicken Grinder Rolls

These chopped chicken grinder rolls are amazing as a snack or meal. It’s made with grilled skinless chicken breast that’s marinaded in a bold sauce then served on a toasted bun and topped with cheese and  a succulent salad, enjoy.

 

Chopped Chicken Grinder Rolls

Ingredients

  • 6 Brioche hot dog buns
  • 6 sliced Provolone cheese
  • 2 pounds thin sliced boneless skinless chicken breasts
  • 1/2 cup Budweiser Bold and Savoy Marinade
  • 1 tsp The Blend by Kinder’s or with salt and pepper
  • 1 Tbsp Cajun Seasoning
  • 3-4 Pepperoncini peppers or banana peppers chopped
  • 1/4 red onion diced
  • 2 cups iceberg lettuce chopped
  • 2 Tbsp red wine vinegar
  • 1 1/4 Tbsp dried oregano
  • 2 Tbsp extra virgin olive oil
  • 1 1/4 cup mayonnaise
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350°F.
  2. Season chicken with the Blend spice and Cajun Seasoning.
  3. Place in a large bowl, pour on Marinade and massage until thoroughly coated. Set aside.
  4. In a large bowl add mayonnaise, olive oil, red wine vinegar salt, pepper and oregano.
  5. Whisk together then add pepperoncini, red onions and lettuce. Toss together well. Set aside.
  6. Heat 2 Tbsp Olive Oil in a large skillet on medium high heat.
  7. Cook chicken for 4-5 minutes then flip and cook an additional 3 minutes until succulent.
  8. Remove and let rest 7-8 minutes before slicing.
  9. Toast buns if desired. Add Provolone slices and a layer of chicken.
  10. Place in oven just until the cheese melts through.
  11. Remove and add Grinder Salad toppings
