Chicken and Rice Bowl-St Corn

Make the great taste of street corn at home with this chicken and rice bowl recipe. This easy recipe combines fresh corn, mayo, and spices to create this much loved dish, enjoy.

 

Chicken and Rice Bowl – Street Corn

Ingredients

  • 2 chicken breasts grilled and sliced
  • 1 cup cooked rice(white or brown)
  • 2 cups corn kernels fresh or frozen
  • 1 Tbsp butter
  • 1 Tbsp mayonnaise
  • 1 Tbsp sour cream
  • 1 lime juice
  • 1 tsp Chili powder
  • Salt and pepper to taste
  • 1/4 cup Cotija cheese
  • 1 Tbsp Olive Oil
  • Handful fresh cilantro chopped

Directions

  1. Season chicken breasts with salt and pepper.
  2. Heat grill to medium high heat.
  3. Grill chicken breasts 5-6 minutes per side until fully cooked.
  4. Remove, let rest a few minutes and slice into thin strips. Cook rice.
  5. In a pan melt butter over medium heat.
  6. Once hot add corn. Cook 3-4 minutes until slightly charred.
  7. Stir in mayonnaise, sour cream, chili powder and lime juice.
  8. Cook for another additional 2 minutes. Turn off heat.

Assemble bowl

  1. First add rice to the bowl.
  2. Next layer sliced chicken strips.
  3. Top with street corn mixture and Cotija cheese and chopped cilantro.
