Mexican Style Street Corn (Elote)

Bring the great taste of Mexican style street corn to your home. Elote is an easy to make dish and this version takes the corn off the cob for convenient eating, enjoy.

Ingredients
  

  • 4 cups corn kernels fresh or frozen
  • 2 Tbsp butter
  • 1 tsp garlic minced
  • â…“ cup mayonnaise
  • 1 tsp Chili powder or chili
  • 4 oz cotija cheese
  • 1 Tbsp fresh squeezed lime juice
  • ½ Tbsp fresh cilantro chopped
  • Kosher Salt to taste
  • ½ red bell pepper diced Optional

Method
 

  1. Melt butter in a large cast iron skillet over medium high heat.
  2. Add corn and cook, stirring occasionally slightly charred. About 8-10 minutes.
  3. Add garlic and red bell peppers the last 2 minutes of cooking if using.
  4. Turn off heat and allow to cool slightly.
  5. Stir in mayonnaise, chili pequin, cotija cheese and lime juice.
  6. Season with Salt to taste.
  7. Garnish with cilantro and serve immediately.
