Add variety to your side dishes with Louisiana Voodoo Fries and Cajun Corn. These sides are great for picnics, party’s, game day, or lunch. Also the Louisiana voodoo sauces goes great not only on fries but also as a dipping sauce, enjoy.
Louisiana Voodoo Fries and Cajun Corn
Ingredients
Cajun Corn
- 3-4 ears if Corn shucked, cleaned and cut into bite-sized pieces 1 inch
- 1 Tbsp Olive Oil
- 1 Tbsp butter
- 1 Tbsp All purpose seasoning
- 1 1 Tbsp Cajun Seasoning
Voodoo Fries
- 1 bag of straight cut Fries or you can cut them fresh for sure
- The Sauce
- 2 Tbsp butter
- 2 Tbsp all purpose flour
- 2 cups milk
- 1/2 tsp Salt
- 1/2 tsp white or black pepper
- 1 Tbsp Ranch seasoning powder
- 1 tsp cayenne pepper
- 8 oz white Cheddar cheese shredded on the big holes of your grater(2 cups)
Directions
Cajun Corn
- Preheat oven to 425°F
- Drizzle oil over Corn bites.
- Dust with all purpose seasoning and Cajun Seasoning. Rub well to assure Corn is covered.
- Bake for 25-30 minutes turning once. Remove and Enjoy
Louisiana Voodoo Fries
- In a medium saucepan melt butter on medium heat until bubbling a bit.
- Whisk flour into melted butter until combined. Cook about 2 minutes until mixture thickens.
- Gradually whisk in milk (about 1/2 a cup at a time until smooth).
- Add salt, pepper, Ranch power and cayenne pepper.
- Reduce heat to medium low and continue cooking (stirring frequently for 5 minutes until sauce is thickened).
- Gently stir in shredded cheese with a silicone spoon.
- Continue cooking 3-5 minutes stirring occasionally until Cajun cheese sauce is creamy and thickened. Remove from heat.
- Prepare Fries according to package directions. If fresh cut fry until golden brown (you can also bake or air fry).
- Once Fries are done, transfer to a serving platter.
- Pour over Cheese sauce, sprinkle with additional cayenne pepper if desired. Serve warm.
