Thai Style Crab Fried Rice

Fans of fried rice will love this variation of a Thai style crab fried rice. This Thai style recipe adds crab meat and  Thai spices to this fried rice dish. Thai style crab fried rice is simple to make and taste amazing, Enjoy.

Ingredients
  

  • 1 8 oz can lump crab
  • 2 Tbsp vegetable oil
  • 4 cloves garlic minced
  • 2 eggs beaten
  • 3 cups day old rice overnight for optimum results
  • 1 Tbsp low sodium soy sauce
  • 2 tsp fish sauce
  • 1 tsp Sugar
  • ¼ tsp white pepper
  • 1 Tbsp butter
  • â…“ cup finely diced carrots
  • ¼ white onion diced
  • 2 green onions diced
  • Lime wedges cilantro and Cucumber slices for garnish Optional
Side Sauce:
  • 1 Tbsp fish sauce
  • 1 ½ tsp lime juice
  • 1 clove garlic sliced
  • 1 Serrano pepper sliced
  • ½ tsp sugar I used palm sugar

Method
 

  1. Combine all ingredients for side sauce in a bowl and set aside.
  2. In a large skillet or wok heat oil over Medium high heat.
  3. Add garlic and onions. Cook until golden.
  4. Pour in beaten eggs. Cook until bottom has set and scramble lightly.
  5. When eggs are almost cooked add rice. Chop and stir rice so it breaks up and mixes well.
  6. Cook until rice is slightly toasted.
  7. Add soy sauce, fish sauce, sugar and pepper to the mix. Stir in well.
  8. Stir in butter to brown rice more (about 2 minutes).
  9. Add crab green onions and carrots. Stir together for another minute or so. Adjust Seasoning if needed.
  10. Transfer to a serving bowl.
  11. Garnish with lime wedges, sprig of cilantro, Cucumber slices and side sauce.
