
Sweet Chili Shrimp Stir-fry
Stir fried rice is enjoyed around the world and its easy to make at home. The sweet chili gives a Thai flair to this stir fry recipe that everyone will love, enjoy.

Ingredients
- 1-2 pounds large shrimp cleaned and de-veined
- 1 large red bell pepper sliced
- 1 small onion sliced
- 1 bunch of Asparagus cut into thirds
- 2 Tbsp Olive Oil
- 4 garlic cloves diced
- ½ cup sweet chili sauce
- 5 Tbsp soy sauce
- ¼ cup water
- 3 tsp cornstarch
- For Coconut Rice
- 1 15 oz can Coconut milk
- ½ cup water
- 1 ½ cup Jasmine Rice
- 1 tsp Salt
Method
- In a small bowl whisk together sweet chili sauce, soy sauce, water and cornstarch. Combine well and set aside.
- Heat a large cast iron skillet on medium high heat.
- Add 1 Tbsp oil.
- Once heated add stir fry veggies, mix and cook for 4-5 minutes until softened a bit then transfer to a plate.
- Add remaining Tbsp of oil.
- Season Shrimp with salt and pepper then add them to the skillet and cook for 2 minutes per side. Once golden transfer to plate with veggies.
- Add sweet chili mixture to the skillet and simmer for a couple minutes until sauce thickens.
- Return Shrimp and stir fry. Toss in the sauce and serve over Coconut Rice.
Oh yeah...! As for the rice...
- In a medium saucepan add water and coconut milk.
- Bring to a boil.
- Add rice and reduce heat to a simmer.
