
Southwestern Chicken Taco

Ingredients
- 2 lbs boneless skinless chicken breasts
- 1 cup Mexican shredded cheese
- 1 pkg taco seasoning or TasteDis special seasoning blend
- 1 teaspoon minced garlic
- ¼ red onion diced
- 1 small can diced tomatoes
- 1 small can sweet corn
- 1 small can black beans drained
- 2 Tbsp Olive Oil
- 1 pkg pita bread
Seasoning Blend
- 2 Tbsp Chili powder
- 1 Tbsp Adobe Seasoning
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ¼ teaspoon cayenne pepper
- ¼ teaspoon crushed red pepper
- ½ Tbsp dried oregano
- 1 Tbsp cumin
- ½ teaspoon smoked paprika
- 1 teaspoon sea salt
- 2 teaspoons cracked black pepper
Method
- Cut chicken breasts into bite-sized chunks.
- In a medium-sized pan, add 1 Tbsp oil garlic and red onions. Saute until fragrant. Medium heat.
- Add chicken and Seasoning. Cook until chicken is no longer pink. Drain.
- Add tomatoes, corn, and drained black beans. Bring heat to a simmer.
- In a separate skillet on medium-high heat add 1 Tbsp of oil to brown pita bread. About 30 seconds per side.
- Build Super Tacos top with cheese and desired toppings.
