Southwestern Chicken Taco
IngredientsÂ
- 2 lbs boneless skinless chicken breastsÂ
- 1 cup Mexican shredded cheeseÂ
- 1 pkg taco seasoning or TasteDis special seasoning blend
- 1 teaspoon minced garlicÂ
- 1/4 red onion dicedÂ
- 1 small can diced tomatoesÂ
- 1 small can sweet cornÂ
- 1 small can black beans drainedÂ
- 2 Tbsp Olive OilÂ
- 1 pkg pita breadÂ
Seasoning Blend
- 2 Tbsp Chili powderÂ
- 1 Tbsp Adobe SeasoningÂ
- 1/2 teaspoon onion powderÂ
- 1/2 teaspoon garlic powderÂ
- 1/4 teaspoon cayenne pepperÂ
- 1/4 teaspoon crushed red pepperÂ
- 1/2 Tbsp dried oreganoÂ
- 1 Tbsp cuminÂ
- 1/2 teaspoon smoked paprikaÂ
- 1 teaspoon sea saltÂ
- 2 teaspoons cracked black pepperÂ
DirectionsÂ
- Cut chicken breasts into bite-sized chunks.Â
- In a medium-sized pan, add 1 Tbsp oil garlic and red onions. Saute until fragrant. Medium heat.Â
- Add chicken and Seasoning. Cook until chicken is no longer pink. Drain.
- Add tomatoes, corn, and drained black beans. Bring heat to a simmer.
- In a separate skillet on medium-high heat add 1 Tbsp of oil to brown pita bread. About 30 seconds per side.Â
- Build Super Tacos top with cheese and desired toppings.
