Strawberry Cheesecake Tacos

This strawberry cheesecake taco is delicious and fun. Bite sized deserts with a taco shaped gram-cracker shell stuffed with cheesecake filling and topped with strawberries, enjoy.

 

Strawberry Cheesecake Tacos

Ingredients

Shells

  • 8 9 inch flour tortilla shells
  • 1 cup graham cracker crumbs
  • 1 1/2 Tbsp brown sugar or granulated sugar
  • 1/2 cup melted butter

Cheesecake

  • 8 ounces cream cheese(room temperature)
  • 3 Tbsp Cheesecake instant pudding mix
  • 1 cup heavy whipping cream
  • Juice of half a lemon
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar

Toppings

  • 1/2 cup chopped strawberries (frozen or fresh/I used frozen and fresh for garnish)
  • 3/4 cup Strawberry glaze

Directions

Shell prep

  1. Preheat oven to 400°F
  2. In a shallow dish add graham cracker crumbs and sugar. Combine well.
  3. Using a 3 1/2 to 4 inch cookie cutter, cut out circles until you have 8 in total.
  4. Stab with fork 7-8 times on each side to prevent air bubbles.
  5. Brush both sides with melted butter the place in the shallow dish of graham cracker crumbs and gently press down. Flip and repeat until shells are fully coated.
  6. Flip a cupcake pan upside down and stagger shells between the cups so they are in a Taco shape.
  7. Place in preheated oven for 10-12 minutes until edges are brown and firm.
  8. Remove from oven and allow to cool a bit. This will allow the shells to keep their shape.

Cheesecake

  1. Add cream cheese to a large bowl and mix well with hand mixer until smooth and creamy. Scrape down sides of the bowl.
  2. Add in the pudding mix, lemon juice, 1/2 cup of the heavy whipping cream, powdered sugar and vanilla extract. Mix until incorporated.
  3. Add in remaining heavy whipping cream and beat until smooth and fluffy.
  4. Fill piping bag with cheesecake filling  using the Wilton 1M piping tip or (use a plastic zipper bag and cut the tip if you don’t have piping bag).
  5. Pipe Cheesecake filling into your cooled Taco shells.
  6. Add chopped strawberries with strawberry glaze into a bowl and stir to combine.
  7. Spoon topping over Cheesecake Tacos and serve immediately.
