Spicy Korean Chicken
Ingredients
- Chicken
2- 2 1/2 lbs boneless skinless chicken thighs (pounded to an even thickness)
Marinade and Glaze
- 1/2 cup low sodium soy sauce
- 3-4 Tbsp gochujang
- 1/4 cup honey
- 2 Tbsp Sesame oil
- 2 Tbsp light brown sugar
- 1 1/2 Tbsp rice wine or Sherry
- 4 cloves garlic minced
- 1 Tbsp ginger (freshly grated)
- Green onions and toasted sesame seeds (Optional)
Directions
- In a large bowl whisk together marinade ingredients. Put 1/2 cup aside for sauce.
- Place chicken in a large zip lock bag, pour Marinade over chicken massage well an let marinate 4-8 hours or overnight.
- When ready to cook let sit at room temperature for 15-30 minutes.
- Heat grill or cast iron skillet to 350- 375°F
- Grill chicken 4-5 minutes on smooth side. Turn chicken over and cook another 4-5 minutes until internal temperature of 165°F
- Remove from heat and let rest for 5 minutes before slicing. Top with sesame seeds and green onions if desired.
