
Spicy Korean Chicken

Ingredients
- Chicken
- 2- 2 ½ lbs boneless skinless chicken thighs pounded to an even thickness
Marinade and Glaze
- ½ cup low sodium soy sauce
- 3-4 Tbsp gochujang
- ¼ cup honey
- 2 Tbsp Sesame oil
- 2 Tbsp light brown sugar
- 1 ½ Tbsp rice wine or Sherry
- 4 cloves garlic minced
- 1 Tbsp ginger freshly grated
- Green onions and toasted sesame seeds Optional
Method
- In a large bowl whisk together marinade ingredients. Put 1/2 cup aside for sauce.
- Place chicken in a large zip lock bag, pour Marinade over chicken massage well an let marinate 4-8 hours or overnight.
- When ready to cook let sit at room temperature for 15-30 minutes.
- Heat grill or cast iron skillet to 350- 375°F
- Grill chicken 4-5 minutes on smooth side. Turn chicken over and cook another 4-5 minutes until internal temperature of 165°F
- Remove from heat and let rest for 5 minutes before slicing.
Top with sesame seeds and green onions if desired.
