Kenny’s in the kitchen with a new twist to the Bogus burrito, this is the southwestern chicken burrito done chimichanga style. Enjoy!!!
Southwestern Chicken Burrito
Ingredient
- Rotisserie chicken (2 large pcs)
- 1 can corn
- 1 can of black beans
- 1 cup spinach
- 1 cup baby arugula
- Flour tortilla
- Provolone cheese
- Cheddar cheese
Directions
- Shred cooked chicken or cut into chunks and slices
- Place chicken in the pot and add corn, beans, and greens
- On high heat bring the pot to boil then reduce heat to medium and simmer for 10 min until thickens
- Place cheese slices on the middle of tortilla then add 3 tbsp of filling
- Fold in edges of tortilla and roll into a burrito
- Preheat skillet with 1 tbsp of oil
- Folded side down place burrito onto hot skillet
- Once golden brown flip side and repeat
