Southwestern Chicken Burrito done chimichonga style

Kenny’s in the kitchen with a new twist to the Bogus burrito, this is the southwestern chicken burrito done chimichanga style. Enjoy!!!

Southwestern Chicken Burrito

Ingredient

  • Rotisserie chicken (2 large pcs)
  • 1 can corn
  • 1 can of black beans
  • 1 cup spinach
  • 1 cup baby arugula
  • Flour tortilla
  • Provolone cheese
  • Cheddar cheese

Directions

  1. Shred cooked chicken or cut into chunks and slices
  2. Place chicken in the pot and add corn, beans, and greens
  3. On high heat bring the pot to boil then reduce heat to medium and simmer for 10 min until thickens
  4. Place cheese slices on the middle of tortilla then add 3 tbsp of filling
  5. Fold in edges of tortilla and roll into a burrito
  6. Preheat skillet with 1 tbsp of oil
  7. Folded side down place burrito onto hot skillet
  8. Once golden brown flip side and repeat
