Shrimp Fajitas in a Magic Marinade

IngredientsÂ
- 1/4 cup of Olive Oil
- 4 garlic cloves(minced)
- 1 Tbsp lime juice from 1/2 a lime
- 1 Tbsp Cajun Seasoning
- 1/2 tsp Salt
- Shrimp Fajita ingredients
- 1lb large Shrimp (cleaned, peeled and deveined
- 2 Bell Peppers (any color) sliced
- 1/2 medium onion (sliced)
- 1/4 cup cilantro (chopped)
- 2-3 teaspoons lime juice (from 1/2 lime)
To Serve
- 8 small flour tortillas
- Jalapeño Ranch or Yum Yum sauce
- 1 lime cut into wedges (Optional)
- 1 Avocado (sliced/Optional)
Instructions
- In a small bowl, combine marinade ingredients: 1/4 cup Olive oil, 4 garlic cloves (minced), 1 Tbsp lime juice (from 1/2 lime, 1 Tbsp Cajun Seasoning and 1/2 tsp Salt.
- Slice bell peppers and onions thin, place in a bowl. Pour 1/2 of the Marinade over the vegetables, toss to combine and set to the side.
- In a second bowl, pat Shrimp dry with a paper towel, add the remaining Marinade and stir to combine.
- Heat a large pan over Medium heat add 1/2 Tbsp oil, when hot add Shrimp in a single layer for 1-2 minutes per side or just until cooked through. Transfer to a plate.
- In the same pan add 1/2 Tbsp oil and add the marinated vegetables and Saute until golden brown on the edges (about 10 minutes) stirring occasionally, then turn off the heat.
- Add Shrimp back to the pan along with 1/4 cup of cilantro and 2-3 teaspoons lime juice (from 1/2 lime) to taste over mixture and toss to combine. Serve Fajitas with warm or toasted tortillas and Yum Yum (what i used) or any sauce of your choice.
