
Sesame Chicken Breast
Here is an Asian-inspired dish that's sure to please sesame chicken breast. We take chunks of chicken breast and add a delicious ginger and soy-sesame sauce that can be served over a bed of rice. Enjoy

Ingredients
- 1 lb. Boneless skinless chicken breasts cut into bite-sized chunks.
- 1 large egg
- 3 Tbsp cornstarch
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 Tbsp Olive Oil divided
For the sauce
- ½ cup low sodium soy sauce
- 2 Tbsp rice or apple cider vinegar
- ¾ teaspoon sesame oil
- 1 Tbsp cornstarch
- 3 Tbsp packed brown sugar
- 1 teaspoon minced garlic
- ½ teaspoon ground ginger
- 2 teaspoons sesame seeds
- ½ cup of water or chicken stock
Method
- In a small bowl whisk together the ingredients for the sauce. Set aside.
- Cook rice and steam or saute vegetables. Set aside.
- In a small bowl whisk egg, with cornstarch, salt, and pepper. Add chicken chunks to the batter and mix well.
- In a large skillet heat 1 Tbsp oil.
- Cook chicken in two batches using the second Tbsp for the second batch. Cook until golden brown on each side.
- Once the chicken is done pour sauce over it and simmer on medium-low heat until sauce thickens. Remove from heat.
Serve over white rice with steamed or Sautéed Veggies. I went with the Sautéed Veggies. Delicious!!!
