Salmon Croquettes

Ingredients
- 2 Lb salmon
- 2 garlic cloves minced
- 1/4 yellow onion thinly sliced
- 2 mini sweet red peppers or 1/4 red pepper
- 1Â Tb black pepper
- 1 Tb salt
- 1/4 cup mayo
- 1/4 cup chopped parsley
- Cornmeal
- 1 egg
Directions
- In a large bowl combine all ingredients
- Beat the egg before adding it to the mixture
- Using a large spoon or your hand (make sure they’re clean) thoroughly mix the ingredients
- Roll mixture into baseball (slightly smaller) sized balls
- Place 1/2 cornmeal in a bowl
- Roll salmon balls in cornmeal covering completely
- Flatten the ball slightly into a patty and set it to the side on parchment paper
- Fill the skillet with 1/4 – 1/2 inch of oil and heat over med-high flame
- Place patty in hot oil and cook 3-4 min per side until golden brown
