Salmon Croquettes

Ingredients

  • 2 Lb salmon
  • 2 garlic cloves minced
  • 1/4 yellow onion thinly sliced
  • 2 mini sweet red peppers or 1/4 red pepper
  • 1  Tb black pepper
  • 1 Tb salt
  • 1/4 cup mayo
  • 1/4 cup chopped parsley
  • Cornmeal
  • 1 egg

Directions

  1. In a large bowl combine all ingredients
  2. Beat the egg before adding it to the mixture
  3. Using a large spoon or your hand (make sure they’re clean) thoroughly mix the ingredients
  4. Roll mixture into baseball (slightly smaller) sized balls
  5. Place 1/2 cornmeal in a bowl
  6. Roll salmon balls in cornmeal covering completely
  7. Flatten the ball slightly into a patty and set it to the side on parchment paper
  8. Fill the skillet with 1/4 – 1/2 inch of oil and heat over med-high flame
  9. Place patty in hot oil and cook 3-4 min per side until golden brown
Let the patties cool on a wire rack, plate and enjoy!
