This roasted duck in soy glaze recipe is amazing. Take a plump duck, simmered it in a honey glaze then roast it until the inside is tender and the outside a sweet crispy glaze. If you’re a fan of fowl here’s one for you roasted duck in a honey soy glaze, enjoy.
Roasted Duck in Honey Soy Glaze
IngredientsÂ
- 1 5 1/2 pound duck
- 4 cups of water
- Salt
- 1 cup low sodium soy sauce (divided)
- 1/3 cup honey plus 1/4 cup
- 1/2 cup hoisin sauce (divided)
- 1/4 cup wine or champagne vinegar
- 2 Tbsp Sherry or Marsala

- Preheat oven to 500°F and set oven rack in the center position.
- Remove extras from duck and discard or save for later. Season inside of duck with salt.
- In a pot large enough to fit the duck, combine water, 3/4 cup soy sauce 1/3 cup of honey and 1/4 cup of hoisin sauce. Bring mixture to a simmer over low heat. Baste duck for just a couple of minutes. Remove the duck and place it breast side down in a roasting pan fitted with rack that elevates it off the bottom pan and allows for hot air to circulate as it cooks.
- Place roasting pan in oven and immediately reduce temperature to 400°F. Cook for 25 minutes. Remove, turn over and baste with duck juices. Put back into the oven and bake for an additional hour (depending on the size of the duck).
- In a medium saucepan combine wine vinegar remaining soy sauce, honey, hoisin sauce and Marsala. Bring to a boil then bring mixture to a simmer until it reduces and starts to thicken. Taste for seasoning. Add pepper if you like(I like).
- Remove duck from oven and baste with drippings from the bottom of the pan. Internal temperature should be 150°F . Transfer to cutting board and pour 1/2 the Glaze over duck (save the rest for plating). Let duck rest about 15 minutes, carve and serve with potatoes (in the duck fat if you’re smart).
