Red Snapper in a Creamy Creole Sauce
Ingredients
- 4 red snapper fillets
- 2 Tablespoonfuls of oil divided
- Salt and pepper
- 1/2 cup onion diced
- 1/2 cup bell pepper diced
- 2 garlic cloves minced
- 1 cup tomatoes diced
- 1/2 cup chicken stock
- 1/2 cup heavy whipping cream
- 1 Tbsp Creole Seasoning
- Fresh parsley chopped Handful
Direction
- Season Red Snapper with salt and pepper on both sides.
- Heat olive oil in a large skillet to medium heat.
- Add diced onions and peppers. Saute about 5 minutes until softened.
- Stir in garlic and saute another minute.
- Add diced tomatoes and chicken stock. Let simmer for 5 minutes.
- Stir in heavy whipping cream and Creole Seasoning. Simmer for an additional 2-3 minutes until it thickens slightly.
- Meanwhile in a separate skillet heat remaining oil on medium high heat.
- Add Red Snapper and cook 3-4 minutes per side until golden brown and done.
