Oven Roasted Veggies

Take your side dish from bland to exciting with this oven roasted veggie recipe. Kenny takes us into his kitchen to prepare this simply yet tasty mix of vegetables and spices for an ultimate over roasted veggie meal. TasteDis!

Ingredients
  

  • 2 carrots
  • 2 parsnips
  • 1 medium onion/chopped in large chunks
  • 5-6 mini honey golden potatoes
  • 2 heads of broccoli
  • 1 lemon
  • ¼ cup fresh cilantro chopped
  • 2-3 Tb Oil olive oil, Gravesend or whatever you like
  • 2 Tb Sea Salt
  • 2 Tb cracked black pepper

Method
 

  1. Preheat oven to 400 degrees
  2. Line a baking sheet with aluminum foil *(Wash All Veggies)
  3. Remove tops and bottoms from Carrots and Parsnips.
  4. Cut into small chunks as you desire.
  5. Cut potatoes and onions in similar sized chunks to be uniformed with other veggies.
  6. Cut Broccoli Florets from stalk.
  7. Lay all veggies out on baking sheet, drizzle with oil, seasoned with salt and pepper.
  8. Massage Ingredients together and make sure they're in a single layer on the pan for even cooking.
  9. Bake for 35-40 minutes checking occasionally and turning once about halfway through.
  10. Drizzle lemon juice(about 1/2 a lemon) and top with chopped cilantro.
