Mozzarella Chicken in a Creamy Spinach Tomato Sauce
IngredientsÂ
- 4 (1 lb. boneless skinless chicken breasts)
- Cooking oil or cooking spray
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon sweet paprika
- Salt and cracked black pepper to taste
- 1 Tbsp cooking oil
- 1 1/2 Tbsp butter divided
- 1 yellow onion diced
- 4 cloves garlic minced
- 1 14oz. Can fire roasted tomatoes or 1 lb tomatoes diced.
- 1/2 cup dry white wine or low sodium chicken broth
- 3-4 cups baby spinach
- 1-2 cups Mozzarella Cheese shredded
- Fist full of fresh parsley chopped
DirectionsÂ
- Clean chicken and pat dry with paper towel. Apply or spray cooking oil.
- Mix garlic powder, onion powder, dried oregano, dried basil, sweet paprika, salt and pepper into a dry mix. Apply to both sides of chicken breasts.
- In a cast iron or oven safe skillet melt 1 Tbsp of oil and 1/2 teaspoon butter over medium heat.
- Add chicken and cook for 5-7 minutes per side until cooked through (internal temperature of 165°F.) Remove and set aside covered.
- Add remaining butter to skillet over medium heat.
- Add onions for about 2 minutes until translucent.
- Add garlic for another 30 seconds until fragrant.
- Add tomatoes and increase heat to medium high and cook until bubbling.
- Stir in wine or chicken broth for about 2-3 minutes.
- Add spinach and cook for 1 minute until spinach is wilted.
- Transfer chicken back to the mix.
- Preheat broiler.
- Top chicken with Mozzarella.
- Broil in oven for 2-3 minutes until golden. Remove and garnish with parsley.
