This is an easy recipe for marinading and grilling boneless chicken. The marinade is simple and with it you can add a little flavor to your grilled chicken. The marinade itself is a basic mixture of olive oil, balsamic vinegar, brown sugar, garlic, salt pepper, and any spices you like, we’re using oregano and thyme.
Ingredigants:
20 oz. boneless chicken thighs
2 oz. olive oil
1 oz. balsamic vinegar
1/8 cup brown sugar
1 garlic clove
1 tbs pepper
1tsp salt
1 tbs thyme
1 tbs oregano
Directions:
1. Mix the oil, vinegar and sugar. Make sure to mix well and allow most of the sugar to dissolve although it will not full dissolve into the mixture.
2. Using a mincer add in one clove of garlic and the spices, mix well.
3. I use a fork to tenderize the meat and add the marinade making sure to saturate all of the meat.
4. Let chicken sit in the marinade for at east an hour.
Next on to the grilling!!
1. Using bbq lighter funnel add paper to the bottom.
2. Flip and add coal to the top and light paper on underside. Let the coals to get red hot, or at least the coals on the bottom.
3. Fill grill with coals only on one half of grill for indirect grilling. Cover and let sit for 15 min or until 400 degree
4. Once the grill is nice and hot place meat on the direct heat side and allow to cook for 2-3 min. You want the grill hot enough to hear the sizzle when the meat is placed on it, that’s how you get the nice grill marks.
5. Flip and cook 2-3 min.
6. Place meat on indirect heat side cover and cook for 10-20 minutes depending on the meat thickness. Also dark meat cooks faster than white.
