Lobster Fra Diavolo is a great Italian meal. Made with linguine, lobster, and herbs this pasta dish is bound to be a favorite, enjoy.
Lobster Fra Diavolo
Ingredients
- 1 lb Linguine
- 2-3 lobster tails(cooked and cubed)
- 3 Tbsp Olive Oil
- 1 onion finely chopped
- 3 garlic cloves chopped
- 1/2 tsp crushed red pepper
- 1/2 tsp dried oregano
- 1/2 tsp Salt
- 1/2 tsp cracked black pepper
- 1/2 cup cognac
- 14.5 oz can diced tomatoes
- 3 Tbsp fresh parsley chopped
- 4 fresh basil leaves chopped
Directions
- In a large pot cook pasta according to package directions reserving 1/2 cup pasta water.
- Heat olive oil in a large cast iron or heavy skillet over medium high heat.
- Add onions and cook for 3-4 minutes.
- Add garlic, red pepper flakes, salt, pepper and oregano. Mix together for about a minute.
- Add cognac and scrape up the brown bits.
- Add diced tomatoes, lobster, chopped parsley and basil. Mix well until heated through.
- Add Linguine to the mix and combine well with the sauce.
- Add a little of your reserved pasta water if sauce is a bit dry.
- Taste and add seasoning if needed (probably not).
