Life Changing Chicken Fajitas
INGREDIENTS
- 2 lbs boneless skinless chicken thighs or breasts sliced into 1in bite-sized strips
- 2 Tbsp lime juice or the juice of one lime
- 1 Tbsp soy sauce
- 1 tsp liquid smoke
- 1 1/2 Tbsp cumin
- 1 Tbsp Kosher Salt
- 1 Tbsp Chili powder
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1/4 tsp cayenne pepper
- 1/3 cup chopped cilantro
- 2-3 garlic cloves minced
- 2 Tbsp vegetable oil for frying
- 2 Tbsp butter for searing chicken
- 3 colorful bell peppers (red, green and orange or yellow) sliced
- 1 small onion sliced
- 1 tsp Kosher Salt to season the veggies
- 12 6in Fajita size flour tortillas
- 1 cup Colby Jack cheese shredded optional (Do it)
For Garnish:
- Sour cream
- Guacamole
- Lime wedges
- Chipotle Sauce
INSTRUCTIONS
- In a medium sized bowl add chicken.
- Add marinade ingredients: juice of one lime, 1 Tbsp soy sauce, 1 tsp liquid smoke, cumin, Kosher Salt, chili powder, smoked paprika, onion powder, cayenne pepper, chopped cilantro, minced garlic. Mix together and combine well.
- Let chicken marinate for at least 15 minutes.
- In a large cast iron skillet heat 2 Tbsp vegetable oil on medium high heat.
- Once oil is shimmering add chicken pieces smooth side down (Don’t overcrowd pan). Sear for about 2 minutes until bottom is beautifully blackened.
- Add 1 Tbsp butter to the pan and move around until melted.
- Flip chicken pieces over into the butter. Allow to sear another 2 minutes or until juices run clear. Work in batches.
- Remove chicken to a plate and tent with foil to keep warm.
- Add 2 more Tbsp of vegetable oil to the skillet on medium high heat.
- Once hot add veggies. Add 1 tsp Kosher Salt and mix together well and wooden spoon scraping up all the delicious chicken pieces from the pan.
Pour over any leftover marinade. - Saute for 2-3 minutes or as long as you desire.
- Return chicken to the skillet, mix well and remove from heat.
- Heat tortillas. Sprinkle cheese on bottom of tortillas if using.
- To build Fajitas add chicken, veggies and your favorite toppings. Serve with cilantro lime rice, black beans and lime wedges.
