Lemon Zaatar Chicken

Excite your taste buds with Lemon Zaatar chicken. A flavorful combination of marinaded chicken, onions, potato's, and lemons baked to perfection, enjoy.

Ingredients
  

For Marinade:
  • ½ cup extra virgin olive oil
  • 1 lemon juice and zest
  • 4 garlic cloves
  • ¼ cup Zaatar seasoning
  • ½ tsp Kosher Salt
  • ½ tsp red pepper flakes
Mix
  • 8 Boneless skinless chicken thighs
  • 2 large russet potatoes cut into 1 in chunks or mini potatoes rinsed and cut in half
  • 1 red onion
  • 2 lemons
  • 1 Tbsp paprika
  • 3 green onions finely chopped for garnish

Method
 

  1. Preheat oven to 425°F.
  2. Line a baking sheet with parchment. Set aside.
  3. To a blender or small food processor add your olive oil, lemon juice and zest from 1 lemon, garlic, Zaatar, salt and red pepper flakes.
  4. Blend until smooth.
  5. In a large bowl add chicken and pour Marinade over and combine well. Allow to marinate while you prepare the vegetables.
  6. Add cut potatoes to the bowl.
  7. Cut red onion in half and each half into quarters.
  8. Quarter the lemons the same way.
  9. Add the onions and lemon to the bowl and combine everything well.
  10. Pour onto your prepared baking sheet, sprinkle paprika over the top and bake for 30-35minutes.
  11. Remove from oven, sprinkle with green onions and spoon over sauce drippings.
