Switch up your regular lasagna with this lasagna soup recipe. Its not a stew, but not really a soup…its lasagna soup, enjoy.
Lasagna Soup Recipe
Ingredients
- 1 Tbsp butter
- 1 lb turkey Italian sausage
- 1 yellow onion diced
- 5-6 garlic cloves minced
- 2 Tbsp tomato paste
- 1 tsp Italian seasoning
- 1 tsp dried oregano
- 1 Tbsp Cajun Seasoning
- 1 tsp black pepper
- 1 pinch of red pepper flakes
- 24 ounces tomato sauce
- 6 cups chicken broth
- 1/2 cup heavy whipping cream
- 14 oz can diced tomatoes
- 1 pkg Lasagna noodles broken into 1 1/2in pieces
- Handful of fresh basil rough chopped
Ricotta Cheese Ball
- 6oz Ricotta cheese
- 1/4 cup Parmesan cheese freshly grated
- 1/4 cup Colby Jack cheese shredded
- 1/4 cup Cheddar or Gouda cheese shredded
- 1 tsp Cajun Seasoning
- 1 Tbsp fresh parsley chopped
Mix cheese ingredients in a large bowl and form into small cheese balls and chill until Lasagna is ready.
Directions
- In a large Dutch oven melt butter and 1 Tbsp Olive Oil.
- Saute onions until translucent.
- Add garlic and saute another 30 seconds.
- Add Italian sausage and cook on medium heat until browned and no longer pink add seasoning and combine well with onions and garlic.
- Add tomato paste. Mix
- Add chicken broth and diced tomatoes. Stir and cover and reduce to a simmer.
- Taste and add more seasoning if needed.
- Add Lasagna pieces and cook about 10-12 minutes.
- Add whipping cream and fresh basil. Turn off heat.
