Lasagna Soup Recipe

Switch up your regular lasagna with this lasagna soup recipe. Its not a stew, but not really a soup...its lasagna soup, enjoy.

Ingredients
  

  • 1 Tbsp butter
  • 1 lb turkey Italian sausage
  • 1 yellow onion diced
  • 5-6 garlic cloves minced
  • 2 Tbsp tomato paste
  • 1 tsp Italian seasoning
  • 1 tsp dried oregano
  • 1 Tbsp Cajun Seasoning
  • 1 tsp black pepper
  • 1 pinch of red pepper flakes
  • 24 ounces tomato sauce
  • 6 cups chicken broth
  • ½ cup heavy whipping cream
  • 14 oz can diced tomatoes
  • 1 pkg Lasagna noodles broken into 1 1/2in pieces
  • Handful of fresh basil rough chopped
Ricotta Cheese Balls
  • 6 oz Ricotta cheese
  • ¼ cup Parmesan cheese freshly grated
  • ¼ cup Colby Jack cheese shredded
  • ¼ cup Cheddar or Gouda cheese shredded
  • 1 tsp Cajun Seasoning
  • 1 Tbsp fresh parsley chopped
Mix cheese ingredients in a large bowl and form into small cheese balls and chill until Lasagna is ready.

Method
 

  1. In a large Dutch oven melt butter and 1 Tbsp Olive Oil.
  2. Saute onions until translucent.
  3. Add garlic and saute another 30 seconds.
  4. Add Italian sausage and cook on medium heat until browned and no longer pink add seasoning and combine well with onions and garlic.
  5. Add tomato paste. Mix
  6. Add chicken broth and diced tomatoes. Stir and cover and reduce to a simmer.
  7. Taste and add more seasoning if needed.
  8. Add Lasagna pieces and cook about 10-12 minutes.
  9. Add whipping cream and fresh basil. Turn off heat.
  10. Garnish with Ricotta cheese ball.
