Lasagna Roll-ups

Lasagna lovers will enjoy this lasagna roll-ups recipe. It’s made with Italian sausage, marinara sauce, spices, and lasagna noodles rolled up into mouthwatering portions, enjoy.
Lasagna Roll-ups

INGREDIENTS

  • 1 16oz package Lasagna noodles
  • 1 lb. Ground Beef, turkey or Italian sausage (I used turkey Italian sausage)
  • 24 oz marinara sauce
  • 1 small onion diced
  • 5 garlic cloves minced
  • 1 tsp sea salt
  • 1 tsp black pepper 1 tsp dried oregano
  • 1 tsp smoked paprika
  • 1/2 cup beef or chicken stock depending on meat you use
  • 1 large egg
  • 1 15oz container Ricotta cheese
  • 1/4 cup fresh Italian parsley chopped plus more for garnish
  • 1/4 cup Parmesan cheese shredded
  • 3 cups Mozzarella Cheese shredded divided

DIRECTIONS

  1. Preheat oven to 375°.
  2. In a large pot filled with lightly salted water, cook lasagna noodles according to the package instructions.
  3. Drain then fill pot with cold water to stop the cooking process and also prevent pasta from sticking together.
  4. Heat dutch oven or large pan on medium high heat.
  5. Cook ground meat breaking up with a spatula until no longer pink. 3-4 minutes.
  6. Add onions and cook until translucent. 2-3 minutes.
  7. Add garlic and add garlic, salt, pepper, dried oregano and smoked paprika. Saute for another minute or so.
  8. Add marinara sauce and stock. Bring to a simmer.
  9. Reduce heat to medium low and continue simmering for 30 minutes or more (low and slow is best).
  10. Spread a half a cup of meat sauce over the bottom of a casserole dish. Set aside.
  11. In a large bowl add Ricotta, 1 egg, 1/4 cup shredded Parmesan cheese, 1 1/2 cups Mozzarella Cheese, and chopped parsley. Stir together well.
  12. On a large baking sheet, lay lasagna noodles in a row side by side.
  13. Scoop cheese mixture with a cookie scoop. Drop in the middle of each lasagna noodle and spread from end to end.
  14. Spread about 1 1/2 Tbsp of meat over the cheese mixture and roll lasagna noodles from the bottom to the top of the baking sheet.
  15. Transfer rolled up noodles to casserole dish.
  16. Spread remaining meat sauce over the top of the roll-ups and sprinkle the remaining Mozzarella Cheese over the top.
  17. Tent with aluminum foil and bake for 45 minutes.
  18. Remove foil and broil for 2-3 minutes until cheese is lightly golden.
  19. Garnish with remaining parsley.
