Lasagna lovers will enjoy this lasagna roll-ups recipe. It’s made with Italian sausage, marinara sauce, spices, and lasagna noodles rolled up into mouthwatering portions, enjoy.
Lasagna Roll-ups
INGREDIENTS
- 1 16oz package Lasagna noodles
- 1 lb. Ground Beef, turkey or Italian sausage (I used turkey Italian sausage)
- 24 oz marinara sauce
- 1 small onion diced
- 5 garlic cloves minced
- 1 tsp sea salt
- 1 tsp black pepper 1 tsp dried oregano
- 1 tsp smoked paprika
- 1/2 cup beef or chicken stock depending on meat you use
- 1 large egg
- 1 15oz container Ricotta cheese
- 1/4 cup fresh Italian parsley chopped plus more for garnish
- 1/4 cup Parmesan cheese shredded
- 3 cups Mozzarella Cheese shredded divided
DIRECTIONS
- Preheat oven to 375°.
- In a large pot filled with lightly salted water, cook lasagna noodles according to the package instructions.
- Drain then fill pot with cold water to stop the cooking process and also prevent pasta from sticking together.
- Heat dutch oven or large pan on medium high heat.
- Cook ground meat breaking up with a spatula until no longer pink. 3-4 minutes.
- Add onions and cook until translucent. 2-3 minutes.
- Add garlic and add garlic, salt, pepper, dried oregano and smoked paprika. Saute for another minute or so.
- Add marinara sauce and stock. Bring to a simmer.
- Reduce heat to medium low and continue simmering for 30 minutes or more (low and slow is best).
- Spread a half a cup of meat sauce over the bottom of a casserole dish. Set aside.
- In a large bowl add Ricotta, 1 egg, 1/4 cup shredded Parmesan cheese, 1 1/2 cups Mozzarella Cheese, and chopped parsley. Stir together well.
- On a large baking sheet, lay lasagna noodles in a row side by side.
- Scoop cheese mixture with a cookie scoop. Drop in the middle of each lasagna noodle and spread from end to end.
- Spread about 1 1/2 Tbsp of meat over the cheese mixture and roll lasagna noodles from the bottom to the top of the baking sheet.
- Transfer rolled up noodles to casserole dish.
- Spread remaining meat sauce over the top of the roll-ups and sprinkle the remaining Mozzarella Cheese over the top.
- Tent with aluminum foil and bake for 45 minutes.
- Remove foil and broil for 2-3 minutes until cheese is lightly golden.
- Garnish with remaining parsley.
