Summer is on its way and Kenny’s in the kitchen whipping up a dish that is a refreshing treat and has flavor and heat, jerk chicken and shrimp pineapple bowl. The name itself is a mouth full and the taste…just enjoy!
Jerk chicken & shrimp pineapple bowl
Ingredients
- 1 ripe pineapple
- 2 chicken breast thin cut
- 1 tsp Grace jerk seasoning
- 1 tsp Walkerwood Jamaican jerk seasoning
- 12 jumbo shrimp
- 2 bell pepper
- 1 red onion diced
Directions
- cut pineapple in half including leaves
- cut around inside but do not break the skin
- cut horizontal and vertical lines in fruit
- scoop out cubes
- preheat pan (med temp) add 1 Tb oil
- Add chicken and cook 2-3 min per side until pink gone
- Add shrimp cook for 2-3 min
- Add veggies and simmer for several minutes
- Add some pineapple chunks back into the meat mix and refill the bowl.
