The jerk chicken & shrimp pineapple bowl is a great summer treat

Summer is on its way and Kenny’s in the kitchen whipping up a dish that is a refreshing treat and has flavor and heat, jerk chicken and shrimp pineapple bowl. The name itself is a mouth full and the taste…just enjoy!

Jerk chicken & shrimp pineapple bowl

Ingredients

  • 1 ripe pineapple
  • 2 chicken breast thin cut
  • 1 tsp Grace jerk seasoning
  • 1 tsp Walkerwood Jamaican jerk seasoning
  • 12 jumbo shrimp
  • 2 bell pepper
  • 1 red onion diced

Directions

  1. cut pineapple in half including leaves
  2. cut around inside but do not break the skin
  3. cut horizontal and vertical lines in fruit
  4. scoop out cubes
  5. preheat pan (med temp) add 1 Tb oil
  6. Add chicken and cook 2-3 min per side until pink gone
  7. Add shrimp cook for 2-3 min
  8. Add veggies and simmer for several minutes
  9. Add some pineapple chunks back into the meat mix and refill the bowl.
