Method
- Add all jerk Marinade/Sauce to a blender or food processor. Blend ingredients well to a smooth texture (about a minute).
- Clean snapper and pat dry with paper towel.
- With sharp knife, score fish diagonally 2-3 times on both sides to ensure Marinade is throughout (and it just looks fye).
- Pour over Marinade and massage into where you scored fish. Let marinate at least 30 minutes.
- Heat a large cast iron skillet with the grill marks on medium high heat.
- Add a Tbsp of oil. Place your red snapper in the skillet and cook for 4-5 minutes per side.
- Serve with your favorite sides
Pro Tip: Try cooking them about 4 minutes per side (just until they're golden brown on both sides) then finish them in a 350° oven for 7-9 minutes.
