Jamaican Jerk Red Snapper

Ingredients

  • Jerk Sauce and Marinade
  • 3/4 cup Worcestershire sauce
  • 2 Tbsp soy sauce
  • 3 oz ginger (about 4-5 small pieces)
  • 2 Tbsp Whole Allspice
  • 1/4 cup black peppercorns
  • 1/2 cup palm sugar
  • 1 handful thyme
  • 5-6 Garlic cloves
  • 2 Tbsp Kosher Salt
  • 1 habanero pepper or Scotch Bonnet for more authentic flavor (stem removed)

Directions

  1. Add all jerk Marinade/Sauce to a blender or food processor. Blend ingredients well to a smooth texture (about a minute).
  2. Clean snapper and pat dry with paper towel. With sharp knife, score fish diagonally 2-3 times on both sides to ensure Marinade is throughout (and it just looks fye).
  3. Pour over Marinade and massage into where you scored fish. Let marinate at least 30 minutes.
  4. Heat a large cast iron skillet with the grill marks on medium high heat. Add a Tbsp of oil. Place your red snapper in the skillet and cook for 4-5 minutes per side. Pro Tip: Try cooking them about 4 minutes per side (just until they’re golden brown on both sides) then finish them in a 350° oven for 7-9 minutes.
  5. Serve with your favorite sides 😉
