Jamaican Inspired Jerk Meatballs
Ingredients
- 1 lb ground lamb
- 1 lb ground beef
- 1 small yellow onion diced
- 1/2 red bell pepper diced
- 3 cloves garlic minced
- 1/2 cup panko breadcrumbs
- 2 eggs beaten
- Olive oil
- 1/4 cup pineapple juice
- 1 Tbsp lime juice
- 1 Tbsp Worcestershire sauce
- 3 tsp jerk seasoning dry
- 1 cup spicy jerk Marinade
- 1/4 cup cilantro chopped
- Salt and pepper to taste
Directions
- Preheat oven to 375° F.
- Line a baking sheet with aluminum foil and spray with cooking spray.
- In a medium pan heat 1-2 Tbsp oil over med. heat
- Saute onions and red bell peppers in until translucent then add garlic and continue to saute for a couple minutes. Set aside to cool slightly.
- In a medium sized mixing bowl combine ground beef, ground lamb, Sautéed Veggies, eggs, panko breadcrumbs, cilantro, lime juice, pineapple juice, Worcestershire sauce, jerk seasoning, salt and pepper. Mix well (with your hands). Don’t over mix.
- Form into bite sized meatballs and place on your baking sheet.
- Bake for 20 minutes then increase temperature to 425° and bake for an additional 10 minutes until browned.
- Serve on Hawaiian rolls as sliders with a grilled pineapple ring or simply serve with Caribbean dipping sauce.
