This honey chipotle rice bowl makes a great lunch or dinner. Easy to make and healthy for you this chipotle honey rice bowl will be a winner for the whole fam, enjoy.
Honey Chipotle Chicken and Rice Bowl
Ingredients
- 2 boneless skinless chicken breasts cut into strips or diced
- 1/4 cup honey
- 2 Tbsp Chipotle peppers in Adobo sauce minced
- 2 Tbsp Olive Oil
- 1 red bell pepper diced
- 2 cups cooked white rice
- 1 cup corn kernels fresh or frozen
- 1 cup black beans rinsed and drained
- Juice of one lime
- Salt and pepper to taste
- 1 Avocado
- 1/4 cup fresh cilantro chopped
Directions
- Heat 1 Tbsp Olive Oil in a skillet over medium heat. Add chicken. Season with salt and pepper and cook until browned and fully cooked, about 5-7 minutes. Remove and set aside.
- In the same skillet add remaining oil, honey and Chipotle peppers. Stir well and let simmer 2-3 minutes until slightly thickened.
- Return chicken to the skillet and toss in the Honey Chipotle Sauce until fully coated. Cook an additional 2 minutes to allow flavors mesh so to speak. Saute your red bell pepper to the side in the same skillet.
- Assemble bowls. Start with a portion of rice. Top with chicken, bell peppers, corn, black beans, cilantro and Avocado slices.
- Squeeze lime juice over each bowl add serve immediately.
