Hawaiian Sticky Chicken with Pineapples

If you’ve never had Hawaiian sticky chicken with pineapples you’re in for a treat. This Sticky Chicken recipe is made with a brown sugar, garlic, ginger, and pineapple chunks glaze over tender bite sized chunks of tender chicken breast. Sticky Pineapple Chicken Recipe

Ingredients

  • 2-3 chicken breasts cut into bite-sized chunks
  • 1-2 Tbsp cornstarch
  • Salt and pepper to taste
  • 3 Tbsp vegetable oil
  • 1 onion peeled and chopped into wedges
  • 1 red bell pepper chopped
  • 1 15oz can pineapple chunks in juice
  • 2 cloves garlic minced
  • 1 small cube of ginger peeled and grated
  • 2 Tbsp brown sugar
  • 3 Tbsp soy sauce
  • 1 Tbsp tomato paste
  • 2 cups Jasmine Rice for serving
  • Cilantro for garnish

Directions

  1. In a large bowl place chicken breast chunks. Season with salt and pepper. Then coat with cornstarch. Set aside.
  2. In a smaller bowl pour juice off of canned pineapples (pat pineapple chunks dry with paper towel).
  3. Add brown sugar, soy sauce and tomato paste to pineapple juice in bowl and whisk together. Set aside.
  4. In a wok or large skillet heat vegetable oil on medium high heat.
  5. Once hot add chicken and cook until golden brown on all sides.
  6. Add onion and red pepper, cook for about a minute.
  7. Add pineapple chunks and cook for another minute or so. Add garlic and ginger and cook for another minute.
  8. Add pineapple juice, soy sauce and tomato paste mixture to the party.
  9. Stir and let cook on medium high for another 5-6 minutes until liquid reduces and chicken starts to caramelize to a darker brown.
  10. Meanwhile prepare Jasmine Rice according to package directions.
