Greek Lollipop Lamb Chops

Greek Lollipop Lamb Chops

Cook time: 15 minutes
Total time: 50 minutes

Ingredients

  • 1/4 cup Olive oil
  • Juice of 1 lemon (about 1/4 cup of lemon juice)
  • 2 teaspoons dried oregano or 1/2 cup chopped fresh
  • 4 cloves of garlic minced
  • 1 teaspoon Salt
  • 1 teaspoon fresh cracked black pepper
  • 5-6 sprigs of fresh thyme
  • 8 Lamb Chops
  • 1-2 Tbsp oil
Directions
  1. Pat chops dry with paper towels and line on a plate or baking sheet.
  2. In a bowl, whisk ingredients together. Place Lamb Chops in a storage/freezer bag, pour Marinade over chops and let marinate for at least 30 minutes(overnight for even more incredible flavor). Note: Let your chops sit at room temperature for 30 minutes before cooking.
  3. Heat oil in a pan(cast iron preferably or grill plate etc.) over Medium high heat until just starting to smoke. Fry or grill Lamb Chops in 2 batches for 3-4 minutes per side(I did 3 minutes/medium) depending on thickness.
  4. Let rest 5 minutes before serving.
  5. Serve over a Greek salad, rice or potatoes
