Greek Lollipop Lamb Chops

Ingredients
- 1/4 cup Olive oil
- Juice of 1 lemon (about 1/4 cup of lemon juice)
- 2 teaspoons dried oregano or 1/2 cup chopped fresh
- 4 cloves of garlic minced
- 1 teaspoon Salt
- 1 teaspoon fresh cracked black pepper
- 5-6 sprigs of fresh thyme
- 8 Lamb Chops
- 1-2 Tbsp oil
Directions
- Pat chops dry with paper towels and line on a plate or baking sheet.
- In a bowl, whisk ingredients together. Place Lamb Chops in a storage/freezer bag, pour Marinade over chops and let marinate for at least 30 minutes(overnight for even more incredible flavor). Note: Let your chops sit at room temperature for 30 minutes before cooking.
- Heat oil in a pan(cast iron preferably or grill plate etc.) over Medium high heat until just starting to smoke. Fry or grill Lamb Chops in 2 batches for 3-4 minutes per side(I did 3 minutes/medium) depending on thickness.
- Let rest 5 minutes before serving.
- Serve over a Greek salad, rice or potatoes
