Greek Chicken Gyros

No need to go out for your fix of Greek chicken anymore, fam and friends will luv this recipe for Greek chicken gyros. You’ll look like a pro making skewered kabob style Greek chicken in the comfort of your home, enjoy.

 

Greek Chicken Gyros

Ingredients

  • 12 Boneless skinless chicken thighs
  • 1/4 cup Olive oil
  • 2-3 Tbsp Honey Dijon Mustard
  • 6 cloves minced garlic
  • Lemon zest of 2 lemons
  • Juice of half a lemon
  • 1/2 Tbsp Kosher Salt
  • 1 Tbsp dried oregano
  • 1 cup water or chicken stock
  • Pita bread

Directions

  1. Preheat oven to 425°F.
  2. In a bowl combine olive oil, Honey Dijon Mustard, garlic, salt, lemon zest, juice and oregano. Whisk together well.
  3. Pour Marinade over chicken and gently massage until thoroughly coated.
  4. Allow to marinate for at least an hour or up to overnight for optimum results.
  5. Once marinated thread a chicken on a vertical gyro oven plate. Make sure to Rotate each chicken piece opposite from the last. NOTE: If you don’t have a Vertical Gyro Oven Plate, cut an onion in half and place on a baking sheet. Position two wooden skewers vertically threw the onion and then you have it.. No need to buy one.
  6. Add 1 cup of water or chicken stock to the base and place in the oven. Stock will create a delicious sauce.
  7. Bake for 90 minutes. Place a piece of aluminum foil over the top to prevent chicken from burning.
  8. Remove from oven, let rest, cut and eat! You can pair with tomatoes, sliced onions, Tzatziki sauce over Pita bread.
